Description

Red raisin wine made from dried Sangiovese and Aleatico grapes.

With an average of 6 vineyard passes per harvest to ensure the collection of grapes at every stage of ripeness. The grapes are dried in a drying room with natural ventilation. Once they reach 32 Babo (a measurement indicating grams of sugar per 100 g) within the harvest year, the botrytized grapes—wrapped in a veil of glycerin that has allowed for extremely slow dehydration—are destemmed and pressed using a hydraulic press.

Without clarification, fermentation is spontaneous with only indigenous yeasts, no added sulphites, and aging takes place in stainless steel with 6 months of skin maceration.

Around the end of the following year, manual gravity bottling takes place with no filtration. Sediment may occur.

Tasting notes: red fruits such as raspberry and wild cherry, wild strawberry, and rose petals at the peak of bloom.

Food pairings: cheeses, all types of desserts, chocolate, cigars.

Tasting occasions: snacks, brunch-style aperitifs, aperitivo dinners, or throughout the entire meal.

Serving temperature: 16°C.
