Ancestral White Wine made from Biancame Grapes
Spontaneous fermentation with only indigenous yeasts, lasting about 14 days. After fermentation, the wine is bottled with its own lees to age in the bottle. No fining, no filtration, no added sulfites. Natural sediments may be present.
The name Revoluscion comes from a local dialect word once used by farmers to describe progress and change.
We were the first winery in our province to produce an ancestral-style wine outside traditional winemaking schemes with an unconventional, innovative, and unique character.
Harvest Lot: 08/2022
Tasting Notes: Light smoky notes, dried fruit, yeast, licorice, almond, turmeric, citrus and spicy hints.
Food Pairings: Mixed appetizers, cheese boards, cured meats, oily fish, grilled dishes, aperitifs, and seafood.
Serving Suggestions: Perfect for snacks, brunch-style aperitifs, apericena, or with a full meal.
