Description
White wine obtained from Biancame grapes.
Spontaneous fermentation with only indigenous yeasts and 28 days of skin maceration (a full lunar cycle), no clarification, no filtration, no added sulphites; sediment may occur.
The name BelloRibelle originates from the replacement of the name BianchelloRibelle, chosen by Andrea Rignoli, owner of Ristorante La Canonica in Casteldimezzo, Pesaro. The change was required by ICQRF because the name Bianchello is evocative of the Bianchello del Metauro DOC. Ribelle (“Rebel”) reflects that we were the first winery in our province to produce a wine with maceration, outside traditional production methods, with an unusual and indeed “rebellious” character.

Tasting notes: light smoky notes, dried fruit, vegetal aromas, yeasts.
Food pairings: assorted snacks, cheese and charcuterie boards, blue fish, grilled dishes.
Tasting occasions: snacks, brunch-style aperitifs, pre-dinner aperitifs, throughout the meal.
Serving temperature: 12°C.
