Description
Sweet white wine made from dried Bianchello grapes.
The grapes are dried in a drying room with natural ventilation. Once they reach 32 Babo (a measurement indicating grams of sugar per 100 g) within the harvest year, the grapes—wrapped in a veil of glycerin that has allowed for extremely slow dehydration—are destemmed and pressed using a hydraulic press.
Without clarification, fermentation is spontaneous with only indigenous yeasts, and aging takes place in stainless steel. Around the end of the following year, manual gravity bottling is carried out with no filtration. Sediment may occur.

Tasting notes: coffee roasting, tobacco, toffee caramel, candied citrus peel, chestnut, licorice, toasted hazelnut, honey, marzipan.
Food pairings: cheeses, all types of desserts, fruit tarts, ice creams, almond-based cakes, marzipan fruit, shortcrust pastry cookies, cantucci, chocolate, cigars.
Tasting occasions: whenever you feel like enjoying it.
