Description
White wine obtained from Biancame grapes.
Spontaneous fermentation with only indigenous yeasts and maceration on the skins for 28 days (a complete lunar cycle), after which it is bottled with its own yeasts to age in the bottle, remaining a still wine. No clarification, no filtration, no added sulfites, may contain sediment.
The name BelloRibelle comes from the change of the name BianchelloRibelle, chosen by Andrea Rignoli, owner of the restaurant La Canonica in Casteldimezzo di Pesaro. The change was imposed by ICQRF because the name “Bianchello” was considered evocative of the DOC Bianchello del Metauro. Ribelle (Rebel) because we were the first winery in our province to produce a wine with maceration, stepping away from classic production methods, with an unusual character and precisely “Rebellious.”
