White Passito Wine from Late-Harvested Bianchello Grapes
The grapes are naturally dried in a fruit drying room with natural ventilation. Once they reach 32 Babo (a measure indicating sugar grams per 100g) within the harvest year, the grapes—wrapped in a glycerin veil that allows for extremely slow dehydration—are destemmed and gently pressed using a hydraulic press.
With no clarification, fermentation occurs spontaneously with only indigenous yeasts. No sulfites added, and aging takes place in stainless steel.
By the end of the following year, the wine is bottled manually by gravity without filtration or added sulfites. May contain natural sediments.
