Description

Sweet white wine made from overripe Bianchello grapes.

With an average of 8 vineyard passes per harvest to ensure the collection of grapes at every stage of ripeness. The grapes are dried in a drying room with natural ventilation. When they reach 40 Babo (a measurement indicating grams of sugar per 100 g) in the first months of the year following the harvest, the botrytized grapes—wrapped in a veil of glycerin that allowed for extremely slow dehydration—are destemmed and pressed with a hydraulic press.

Without clarification, fermentation is spontaneous with only indigenous yeasts, 6 months of skin maceration, and aging takes place in small wooden barrels or caratelli made from various types of wood (ash, oak, black locust, and mulberry) for a minimum of 7 years. Manual gravity bottling, no filtration. Sediment may occur.

Tasting notes: smoky and toasted notes, coffee roasting, tobacco, peaty hints.

Food pairings: cheeses, all types of desserts, fruit tarts, ice creams, almond-based cakes, marzipan fruit, shortcrust pastry cookies, cantucci, chocolate, cigars.

Tasting occasions: whenever you feel like enjoying it.

Serving temperature: 16°C.
