**White wine made from Biancame grapes.

Spontaneous fermentation with only indigenous yeasts and **skin maceration for 28 days** (a full lunar cycle). No clarification, no filtration, no added sulfites. Sediment may be present.

The name **BelloRibelle** was born from the forced change of the original **BianchelloRibelle**, chosen by Andrea Rignoli, owner of *La Canonica* restaurant in Casteldimezzo (Pesaro). The ICQRF required this modification, as *Bianchello* was considered too evocative of the Bianchello del Metauro DOC. *Ribelle* (Rebel) represents our pioneering spirit: we were the first winery in our province to produce a macerated wine, breaking away from traditional winemaking methods with an unconventional and bold character.

Harvest Batch 09/2022

Tasting notes: Light smoky notes, dried fruit, vegetal aromas, yeast, yellow-fleshed fruit.

Pairings: Appetizers, cheese and charcuterie boards, blue fish, grilled dishes.

Best enjoyed at: Aperitifs, casual snacks, lunches, dinners, all-day sipping.

Serving temperature: 12°C.
